Lemon & Cherry Squares

                     

I feel like I am constantly playing the seven degrees of Kevin Bacon, only a kitchen version though, with flavors or ingredients, no Kevin Bacon involved, maybe bacon though sometimes!

If you read my blog regularly then you *sigh* probably have a little insight in to how my *kitchen brain* works

(I am sorry! I will just apologize now)

But I am thankful that you read, follow, put up with my weird sense of humor and less then perfect pics and hopefully fix some of these great recipes!

So, this recipe came about from my Sweet Tart Muffins, a presidents' day inspired Cherry Muffin!

From that I had a lovely gal pal who hinted she is loving anything lemon and especially likes the flavors of lemon and cherry together. *hint*hint*hint*

So, reading up to this point you should know by now my brain is ticking away,

And so you have these lovely tart-like cookies, Lemon & Cherry Squares...



Lemon & Cherry Squares


Ingredients
   
½ C. butter
1 C. Flour
¼ C. confectioners’ Sugar

Filling:
Cherry Layer:1 C. cherry jelly

Crust:



Lemon Layer:2 eggs
1 C. sugar
2 T. flour
3 T. lemon juice

Garnish:confectioners’ sugar


Directions:
For Crust:

Preheat oven to 350 degrees F.

Butter a 9 x 9 pan.

Combine butter, flour, and confectioners’ sugar and mix until clings together, use pastry blender if you have one.


 Pat evenly into buttered 9 x 9 pan.

Bake at 350 degrees for 20 minutes or until edges are golden brown.

Transfer to wire rack to cool.


For filling:

Spread cherry jelly on top of cooled crust.
 
See the layers coming together

Combine eggs, sugar, flour, and lemon juice. Beat well until all combined.


Pour gently over cherry filling topped crust.

If you don't pour gently it all mixes together, you want to have nice layers 

Return to oven and bake ~ 30 minutes longer or until set. Middle will be a little jiggly.

Remove from oven.

Sprinkle with Confectioners’ sugar.

Let cool.

Cut into squares and serve.
