Ahhh...Blueberries
If you don't have any blueberries in your fridge right now I hope this makes you want to go get some.
We love them at our house.
The kids love to just eat them like candy (I am serious, I won't tell them otherwise either)
I love to throw them in cereal and well make this lovely cake like bread.
(Yes I put it in a loaf pan and call it bread so I can feel better about eating it, you can do the same, give it a try it will make you feel better)
So, let's get down to business at hand...
Amazing Blueberry Bread
from Granny's Kitchen
makes 2 loaves

Ingredients1 ½ c. sugar
⅔ C. oil
1 tsp. vanilla
2 eggs
1 can of blueberries (or 1 pint of fresh blueberries)
2 ½ C. flour
1 tsp. baking soda
1 tsp. salt
1 C. buttermilk
DirectionsGrease two 9 x 3 inch loaf pans and set aside.
Preheat oven to 325 degrees F.
Mix sugar, oil, vanilla, and eggs until creamy and smooth.
Sift 2 ½ c. flour with baking soda and salt. Reserve ½ c. of flour mixture to sprinkle over blueberries)
Add flour mixture alternately to creamed mixture with 1 c. buttermilk.
Mix blueberries with reserved flour mixture and fold into dough, stirring enough to mix berries.
Pour into greased 9 x 3 loaf pans.
Bake at 325 degrees F for 1 hour.

Then enjoy with a nice cup of coffee or hot tea in my case, white tea with blueberry and pomegranate!
This is so simple and easy to make, yet so delicious.
Makes a great breakfast bread or anytime snack.
It is wonderfully sweet but not rich or overpowering so perfect for someone with a sweet tooth like me to keep satisfied enough to stay away from rich chocolate for a little while! And a wonderful way to incorporate fresh berries!

I LOVE LOVE LOVE blueberry bread! Yours looks simple and flavorful! We always have blueberries in the freezer. I buy them up when thay are on sale and use them all year! :)
