Favorite Banana Nut Chocolate Chip Muffins

Got Ripe Bananas?
This sometimes becomes the state of my bananas.
To be honest I like my bananas overly ripe, no one else in the house does though, they would prefer to eat them green!

I think they "hate" this state of bananas so that they can "become" muffins!

So, let's get ready to make some delicious banana nut chocolate chip muffins! (I have to add chocolate to almost everything I make!)









Favorite Banana Nut Chocolate Chip Muffins

  • 1/2 C. vegetable oil
  • 1 C. sugar
  • 2 eggs, beaten
  • 3 mashed bananas (1 C.)
  • 2 C. flour
  • 1 tsp. soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 3 T. milk
  • 1/2 tsp. vanilla
  • 1/2 C. chopped pecans
  • 1 (12 oz.) bag of chocolate chips
Beat oil and sugar together. Beat in eggs and bananas. Sift dry ingredients together, add to banana mix. Beat in milk and vanilla. Stir in nuts and chocolate chips.

Pour into greased or lined muffin pan. Bake at 375 F for 20 to 25 min.






A great breakfast on the go or snack for all!

  3. I think my hubby likes to avoid the bananas until they're extra ripe too because he is a big-time banana bread lover :)
